Right. So the helicopters I have now don't cut it. They fly like a Banshee, and honestly, helicopters don't fly like Coldsnap jets.
So, my question is, is there anyway to make it have helicopter-like physics? Like tilting to go forward, an acceleration, tilting up to go slower, and etc.
Or is a simple thing like this not possible. :|

You're not going to get helicopter physics in CE. But, pelican physics are much closer to a helicopter's physics than a banshee's, so like the others said, use that. The helicopter in Ambush is a good example.

The closest you can get to helicopter physics is if you compare the physics of the vehicle that you're making to the Coldsnap version of the LongSword Fighter. the longsword is pretty close if you pay attention.
