Alright, so with open sauce specifically, what sort of limitations are you looking at when it comes to model size, texture size/resolution, tag space, and map size.

There's no limit for map size. Tag space limit is 24Mb I think? Textures should be less than 10Mb.

Open Sauce doesn't magically improve all of the limitations, it only removes 128Mb map size limit and increases model data limit.

Quick question, I have a small project I'm wanting to work on, is there a tag space/ tag folder limit with the base game or open sauce? Can I have lets say 30gb tag folder and everything function and compile fine?

If you have too many files, models will fail to compile. This includes GBX models and BSP structures. I believe it happens because Tool gives up on locating the shaders in the tagset. It's probably not a GB limit exactly, but a maximum # of files you can have.

Compile as in how, compile a map, or compiling an actual model like tool model?
