In the globals tag, go down to "Multiplayer Information" and change the "unit" to whatever biped you want to use for multiplayer.
For single player, go down a little farther to "Player Information" and change that unit to the biped you want.

If you also want to change the fp hands then go to "First Person Interface" and the first option is for changing the fp hands.

no there is a type of tag called a .globals. it is not found in your scenario but in the folder called globals in the root of the tags folder. your looking for the file called globals.globals

Are you making a single player map? If so, you need to change the biped under "Player Information" which is a little further down.

Have you made sure the biped references a new model and have you recompiled your map?
