Which field would you need to edit to keep an AI Actor Varient from running out of sniper rifle ammo?

Modify the weapon to expend 0 ammo once firing. Of course, once the player picks up the weapon, he'll have infinite ammo. To counter this, you could use a script command to make the specified encounter not to drop any weapons.

I have some snipers spawning at a few random points, and were taking shots at me from afar as I tried stealing their flag. They soon quit firing, so I went to investigate, and the poor marine kept pulling his trigger to no avail, all the while yelling "firing!", and backing up...I didn't have the heart to kill him...

Give them the infinite ammo weapon.

In reality they would have an ammo box, or at least some additional clips for reloading, and not be left without.

Give him infinite ammo but make a giant box of 50cal rounds as a scenery right beside him, making it look like the ammo is coming from somewhere.
