Is there any tutorial that explains in depth attachments, widgets, functions, effects, physics, skeletons/rigging, animation tags, and some of the other more advanced tagging stuff?

Attachments are pretty straightforward, same with widgets, although they're a little different. Functions, I dunno anything about them. Effects, can be learned easily enough. It just takes some messing around with them first.

So what does a specular map, cubemap, a diffuse map, and shaders do?
