So if I am working on a symmetrical map, can I make only half of it, and then just mirror it on the other side and attach the two together? Is that a legit method? It would save a lot of time and effort. :)

You can do that. If it's going to be symmetrical, there's no difference between doing that and making an identical second half.

Uvw and texture the half, before mirroring.

Well, I mirrored my map, and it worked great. :)
