I have always had difficulty modeling an item that is rounded and curved. Weapons, such as the mauler and plasma rifle are examples of both. What are some tips that can be given to make the curves real and not a blocky mess?

Use tris, not quads. and make shure you know how to properly smooth.

What about getting in extreme detail and modeling an entire weapon/item with one object? Is it a lot o extrude and chamfering? What about Bevels?

I suck at organic modeling. You can try using optimized nerbs.

I would say pay attention to your edge flow. I dont really have any experience in this but all the biped tutorials ive seen tell me that.

Edit: Bevel is similar to extrude, but it scales the end of the extrude inward and outward.

Splines could come in handy with this.
