Well, when trying to make a weapon, I made a basic m16. but, when I put it on bipeds, AI, etc, I get this:

Look at the hands. How would I make it so they look like they're holding it normally?

It's the animation of the biped. You would have to make a new animation for the biped of holding your gun for that. Then you would change the label name to your animation name in the weapon tag under $$$ WEAPON $$$

No. The animation is fine. If he didn't have the animation, he wouldn't be holding the weapon. Instead, it's the node that you set for left hand cyborg. Change the position.

Ok, did that, now onto something that has been steering me off progress for awhile - would I export it differently than I do a level? I'm using Gmax, btw.

there is a node for "left hand cyborg" and "left hand marine"
rotate them and move them down a bit. should be fine after that
