Is it possible to have more than 1 gunner for a single vehicle? e.g. a jet with turrets on either side being controlled by separate player, and one at the front controlled by the driver.

Yup. make every extra turret a seperate vehicle, and use (objects_attach <item1> <marker/frame> <item2> <marker/frame>)
ghost.halomaps.org has a turret tut, read that, make seperate turrets, and on your plane, put markers on the places you want the turrets to stick to. the item1 would be the jet.

All the turret tuts will explain is making them. To attach the turret, read a scripting tutorial, and the comand found in hs_doc.txt you want is objects_attach
