Turrets with ai are added below the seat section in the vehicle tag. The turrets are bipeds, and they are added where it says built-in-gunner, where you need to put the actor_variant tag.
I can never get mine to fire when I make new ones, though D:

Try rotating some on the spikes on the left and right collections, or move them more outward, it looks too bare with them all bunched up in one spot.
